Four kitchens off one wok line in West Des Moines
Bamboo House Express is the Asian spot on EP True Parkway where the same cooks move between four kitchens in a shift: Chinese, Korean, Vietnamese and Thai, cooked when you order it.

Four kitchens, one wok
You order at the register and the wok line is right behind it. Nothing waits under a lamp. Most tickets are counter to table in about ten minutes.
Chinese: the wok classics people came in for, orange, sesame and General's chicken battered and dropped per ticket, Mongolian and Szechuan beef straight off the wok. Korean: bulgogi charred on the flat-top and built into a bowl with kimchi, cucumber and a fried egg.
Vietnamese: grilled lemongrass pork over broken rice or cold vermicelli with herbs, pickles and nuoc cham. Thai: pad thai with real tamarind, basil fried rice and wings tossed in fish sauce and basil.
A boxwood wall runs the length of the counter, with a pop-art wok mural and a hand-painted lucky cat watching the pass, and bamboo climbing the dining-room wall under a red folding fan. Order online for pickup or delivery, or take any table if you are staying.
